5 simple and delicious recipes I’m going to try this weekend

From Nando’s PERi-PERi chicken to sweet potato quiche, these easy-to-make meals look too tasty not to try 


It’s time to break the monotonous meal cycle of frozen pizzas and go-to curries.

Being housebound means we homecook a lot more of our meals, and if you rely on a short list of simple staples, like me, dinner can get boring fairly quickly.

But there are so many unique and delicious recipes available, and they are way easier to make than they look.

Here are a few flavourful recipes you can try this weekend.

1. Curried sausage rolls

Sausage rolls are a breeze to make. To add a little something extra, try frying the sausages in a curry medley first.

Then roll them in puff pastry and bake for 20 minutes at 180°C. Full recipe here.

2. Teriyaki Shrimp 

Whisk up a simple teriyaki sauce over heat, add shrimp, snap peas, sesame seeds, rice and voila!

You have a zingy, juicy shrimp dish that satisfies that Chinese takeaway craving. Full recipe here.

3. Sweet potato crust quiche

A sweet potato crust is actually a lot easier to make than a pastry one. Just peel and slice the sweet potato, season and line the quiche dish with the slices before baking for 20 minutes.

The spinach, sun-dried tomatoes and goat cheese add a tasty twist from the usual cheddar routine. Full recipe here.

4. Nando’s PERi-PERi chicken thighs

Nando’s withdrawals have hit many hard during lockdown, but that’s all about to change. The chain recently released the recipe for their PERi-PERi boneless chicken thighs, spicy rice and macho peas.

They are also starting a cooking series, so stay tuned to their Insta live stories for regular recipes.

5. 3-ingredient creme brulee 

This ingenious dessert hack went viral on Tik Tok and it’s easy to see why. The creme brulee is made with just three ingredients: vanilla ice cream, egg yolks and sugar.
